That’s really sweet that you want to show her how much she means. Why don’t you try getting a ‘mom’ themed gift for her? Even if she’s not your mother, something like that would signify how much she means to you. Pair it with a handwritten note explaining the significance and she’ll understand.

I think a memory chest/box that she could cherish and you could start it off by putting any little things you have that has meant something to you. For example maybe she took you to a show or an outing and you still have the tickets or a picture taken at the even. If you have contact with any of her family or relations you could ask them if they have any ‘memories’ they would like to put in it, sometimes even work colleagues have little items. Also you could write down your feelings for her as simple or as intricate as you like. She will also be able to add her own personal memories and more as time goes on. You can get memory boxes as cheap or as expensive as you want them to be and there are loads of shops on online you can get them from. A while back T K Max had some lovely ones. Another lovely, thoughtful and personal gift would be to ‘Name a star after her". Also can purchase online and it will come with a certificate showing it is authentic and all the details of where it is in the sky etc. Same idea can be done with roses etc.
